Working hand in glove with the client Catering Solutions will conduct a detailed program of performance monitoring. This detailed examination can be done on a monthly basis where a comparative analysis between the actual performance and the budgeted performance can be carried out.

This analysis can be confined to Key Performance Indicators such as:
• Food costs
• Labour costs
• Patronage levels

A more detailed performance monitoring exercise can be carried separately or as a part of the monthly performance review.

This more detailed review will address areas such as :
• Implementation of the food safety management system
• “Mystery shopper” programs
• Number of main meal equivalents served per day
• Number of main meals served per full time equivalent
• Detailed purchasing audits.

Following this comprehensive examination a detailed report will be produced and recommendations will be proposed which will allow the client to make very informed decisions that are based on the expert knowledge of the Catering Solutions team.

Catering Solutions would propose that any performance review is conducted in conjunction with a detailed service level agreement.
